Fish Selection: We begin by carefully selecting the freshest sea fish for our pickle.
Cutting and Frying: The fish is expertly cut into small, uniform pieces and gently fried to achieve the perfect texture.
Chilli Paste: To create the signature flavor, we prepare a special paste using both red chillies and Kashmiri chillies. These chillies are soaked in boiling water for hours and then ground into a paste.
Spice Infusion: In a hot pan with our cold-pressed sesame oil, we infuse the pickle with an array of spices, including mustard, fenugreek, ginger, garlic, green chillies, and curry leaves. This aromatic blend is sautéed until golden.
Chilli Paste Addition: The prepared chilli paste and turmeric are added to the pan and cooked until the mixture is perfectly dry, ensuring a balanced and intense flavor.
Fish Integration: The fried fish pieces are gently added to the spicy mix and sautéed for an additional 10 minutes over low flame, allowing the flavors to meld.
Adjusting Sourness: To achieve the desired level of sourness, hot water and vinegar are thoughtfully incorporated.
Final Touch: Asafoetida is added for a hint of complexity, and salt is adjusted to taste. The pickle is then left to cool before being carefully packed and sealed.
