How its made?
Mudhome® Kerala Dried Beef Pickle (Unakkirachi Achar) is crafted with precision and tradition. It begins with premium beef meat, meticulously removing all fat content and cutting it into small pieces, which are then marinated with salt and turmeric before being sundried to perfection. The sundried beef is then fried with cold-pressed sesame oil. The pickle gets its spicy kick from a blend of red chili and Kashmiri chili, which are soaked in boiling water for hours before being ground into a fiery paste.
The cooking process starts by heating sesame oil in a hot pan and infusing it with a fragrant combination of mustard, fenugreek, finely chopped ginger, garlic, green chili, and curry leaves until they turn golden. This flavorful base is then enriched with the chili paste and turmeric, allowing it to dry until all excess moisture evaporates. The dried beef is then reintroduced and sautéed. Hot water and salt are added, along with vinegar, followed by hours of slow cooking to tenderize the beef, which starts out as hard as a rock. Gradually, the beef softens, and finally, a touch of asafoetida seasoning is added.
After cooling, the pickle achieves a thick gravy consistency. This delicious pickle is expertly packed and sealed in safe food jars.
