The key to the exceptional taste of our pickle lies in the use of cold-pressed black sesame seed oil, which adds a distinctive and delightful flavor. The process begins with finely sautéing the carrot pieces in this exquisite oil. Separately, we sauté a blend of green chillies, garlic, ginger, and curry leaves until they reach a rich, golden brown hue. Introducing a blend of red chilli and Kashmiri chilli paste to this aromatic mixture achieves the perfect balance of heat and color. The sautéed carrots join this flavorful symphony, gently simmering over low heat. A carefully measured combination of hot water, vinegar, and salt is added, creating a tantalizing amalgamation.
